ANN ARBOUR, Michigan At Ann Arbor’s Side Biscuit, owner and chef Jordan Balduf infuses his creations with a hint of his hometown.

After deciding to launch his own company because he couldn’t find wings he liked in Ann Arbour, the Buffalo, New York native discovered that he enjoyed giving others a taste of his home state.

Many transplants from western New York come in because “a lot of our specials and products (at Side Biscuit) are actually regional specialties from Buffalo,” the man explained.

In his driveway, Balduf started Side Biscuit during the COVID-19 outbreak, and he later expanded his pop-ups around Ann Arbour. Eventually, in 2021, Balduf set his shop on Packard Street.

The chef has years of experience in the culinary arts, having worked at several James Beard and Michelin Star establishments. This enables him to add a “high level of technique” to each and every one of his wing sauces, he claimed.

Made with butter and Frank’s RedHot, Side Biscuit’s Original Buffalo is their best-selling item. The gochujang-based Gucci Gang sauce, which is sweet and spicy, is a close second.

Balduf stated, “We keep (the original Buffalo) simple, nice and creamy, acidic with a hint of spice.” We take a little longer to fry (our wings) than other people do, so we get
